3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 tsp. kosher salt
1/2 tsp. ground cumin
1/2 tsp. cayenne
1/2 medium onion, peeled and diced
1/2 jalapeno pepper, seeded and minced
2 Roma tomatoes, seeded and diced
1 Tbsp. chopped cilantro
1 clove garlic, minced
Place avocado pulp and lime juice in a large bowl, toss to coat. Drain, and reserve the lime juice. Add the salt, cumin and cayenne; mash with a fork or potato masher. Stir in the onion, jalapeno, tomatoes, cilantro, and garlic. Add 1 Tbsp. of the reserved lime juice. Serve with tortilla chips.
